15 minute noodle poke bowls 🍜

A slurping good time in no time. A dinner flled with fresh, healthy and protein-rich ingredients that will only take you 15 minutes. The star of the show is the miso tahini dressing (it’s good enough to drink).

recipe (serves 3 - 4):

miso tahini dressing:

- 1/3 cup tahini

- 1 tbsp miso

- 1-inch knob ginger

- 1 clove garlic

- 2 tbsp tamari

- 1 tbsp rice wine vinegar

- 1 tbsp rice malt syrup

- 1 tsp toasted sesame oil

- 3 - 4 tbsp water

- pinch of salt and pepper


tamari tofu:

- 500g extra firm tofu, pressed, drained and diced

- 2 tbsp tamari

- 1 tbsp tahini

- 1/2 tbsp rice malt syrup

- 1/2 tbsp toasted sesame oil

- pinch of pepper


other ingredients:

- 250g instant noodles

- 3 - 4 cups spinach

- 1 cup edamame beans, cooked and shelled

- 1 small continental cucumber, diced

- 1 carrot, grated

- 1 - 2 avocados, halved and pitted

- 3 tbsp tamari almonds, chopped

- 2 tsp sesame seeds


1. Place all ingredients for the miso tahini dressing into a food processor and process until smooth.

2. Bring a pot of water to a boil and add the instant noodles. Cook according to package instructions and drain.

3. Meanwhile, heat sesame oil over medium to high in a frying pan. Add the tofu, tamari, tahini, rice malt syrup and pepper. Flip the tofu pieces regularly to mix and cook for 5 minutes.

4. To serve, begin by placing the noodles and spinach into serving bowls. Add the cucumber, carrot, edamame beans, tofu and avocado. Drizzle over the miso tahini dressing and garnish with tamari almonds and sesame seeds.
