healthier choc caramel cups

The dessert I recommend for when you don’t have much time or patience for cooking but need a little something sweet!

recipe (makes 9-10):

- 1 cup medjool dates, speaker in hot water for 10 minutes and drained

- 1/3 cup peanut butter

- 1/3 cup oat or soy milk, plus more if needed

- 1/4 cup rice malt syrup, or choice of liquid sweetener

- 1 tsp vanilla extract

- 160g dark chocolate

- 1 tbsp coconut oil


1. To a food processor add the dates, peanut butter, oat milk, rice malt syrup and vanilla extract. Process until smooth, adding more oat milk if needed.

2. Combine the chocolate and coconut oil in a small microwave-safe bowl. Microwave in 20-second increments, stirring between each, until fully melted.

3. Pour the chocolate into a mini muffin silicon tray, filling each cup about 2/3 of the way. Dollop 1 - 2 tbsp of caramel inside each and drizzle over the remaining chocolate to cover.

4. Set in the freezer for 20 minutes, or until the chocolate has set.
