Showcasing one of my favourite budget recipes from the budget chapter in my cookbook, Chloe’s Vegan Kitchen, with the amazing @renee_buckingham 🫶This miso carrot pasta comes in at a grand total of $1.64* AUD PER SERVE. Get the full recipe via my cookbook, Chloe’s Vegan Kitchen.

ingredients/serves 4:

4 carrots ($1.4)

1/2 brown onion ($0.3)

2 cloves garlic ($0.22)

1 tbsp olive oil ($0.32)

500g pasta of choice (we used rigatoni - $2.8)

1/4 cup tahini ($0.8)

1 & 1/2 tbsp white miso paste ($0.7)


TOTAL: $6.54*

TOTAL PER SERVE: $1.64*


optional:

1/2 tsp smoked paprika

1/4 cup nutritional yeast
